At Seven Springs, we focus on growing apples that reflect where they come from.
Each variety has its own character, shaped by the season it grows in and the moment it’s picked.
Here, quality starts long before harvest.
It comes from paying attention - to the trees, the weather and the moment each apple is ready to be picked.
We focus on growing fewer, better apples. Timing matters. Care matters. And nothing is rushed. The result is fruit with natural flavour, balance and consistency, shaped by the place it comes from and the season it grows in.

Orchard life through the seasons.
Orchard life never really stops. It simply changes pace with the seasons.
Some months are full and fast, others are quieter and more patient. There’s preparation, harvest, pruning and waiting on the weather. What stays the same is the rhythm, shaped by experience, care and the land itself.
Every season leaves its mark on the orchard and on the fruit that comes from it.

Summer is about growth and patience.
Fruit develops on the trees while the orchard is carefully managed to keep everything healthy and balanced. Thinning takes place so each apple has room to grow properly, and irrigation becomes essential as temperatures rise. There’s plenty of mowing, checking and adjusting - constant attention, without rushing what nature is already doing well. -
Autumn is harvest.
Long days, early starts and full bins moving through the orchard as apples are picked at just the right moment. The pace lifts and the orchard hums with energy, with family and team working side by side. Fruit is harvested, binned and cooled quickly to lock in quality. It’s the most intense time of year — busy, rewarding and deeply satisfying. -
Winter is quieter, but no less important.
With harvest complete, the focus shifts to pruning, clean-up and setting the orchard up for the next season. Trees are shaped and rested, maintenance jobs are tackled and new plantings may begin. It’s a time for reflection, planning and care — allowing the orchard to breathe before the cycle begins again. -
Spring is a season of anticipation.
The orchard begins to wake up as trees come into flower, rows soften with colour and the air fills with activity. Bees arrive to do their work, pollinating blossoms that will become the next crop. It’s a hopeful time — careful monitoring, frost watch and early orchard maintenance all matter now. What happens in spring quietly sets the tone for the year ahead.
